FRESH PINEAPPLE JALAPEÑO MARGARITAS

Get ready to tantalize your taste buds with my Fresh Pineapple Jalapeño Margaritas recipe! This refreshing twist on the classic margarita combines the tropical sweetness of fresh pineapple with a fiery kick of jalapeños. This sweet and spicy cocktail for two is bursting with flavor, and is the perfect cocktail for those who like their drinks with a little extra heat!

Instructions

PINEAPPLE PURÉE:
  1. To a high speed blender cup (see Note #2), add fresh cut pineapple that has been cut into 1 inch pieces. Blend until pineapple is completely puréed, and is liquidy and frothy (about 30 to 60 seconds). Set aside (and stir or whisk well just before using - see Note #3).
  1. Halve limes, and use one of the lime halves to rub the rim of two 11 ounce rocks glasses. Then dip the wet rim of each glass into the margarita salt (or Tajín), and tap the glass to remove any excess. Set aside.
  2. Using a juicer, squeeze lime juice, and set aside. Using protective gloves, cut jalapeño slices, remove seeds (optional), and set aside.
  3. To a cocktail shaker, add 3 jalapeño slices, lime juice, and Pineapple Simple Syrup. Muddle gently to release the essence from the jalapeño. Add ice cubes, Grand Marnier liqueur, reposado Tequila, and pineapple purée. Cover, and shake vigorously.
  4. Fill the prepared cocktail glass with fresh ice cubes, add 2 to 3 slices of fresh jalapeño (optional) to each of the prepared glasses. Strain the cocktail into prepared glasses, and garnish with any or all of the optional garnishes (wedge of fresh pineapple, fresh pineapple leaf, fresh lime wheel). Serve immediately, and enjoy!

Notes

  1. I like using this margarita salt that comes in its own container. For another spicy twist, use Tajín Clásico chile lime seasoning on the rim of the glass. Just rub the glass rims with lime, spread Tajín on a plate, and dip the wet rims into the Tajín. 
  2. Use a high speed blender to purée the pineapple. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe. 
  3. You will end up with more fresh pineapple purée than you need for this recipe. It’s easiest to make more, and use the remaining purée for smoothies, or for more margaritas! Prep ingredients for Fresh Pineapple Jalapeno Margaritas recipe.

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

Pineapple Purée

STEP 1a

To a high speed blender cup (see Note below), add 1 cup of fresh cut pineapple that has been cut into 1 inch pieces. Blend until pineapple is completely puréed, and is liquidy and frothy (about 30 to 60 seconds).

Note: Use a high speed blender to purée the pineapple. Both the NutriBullet high speed blender, and the Vitamix high-speed blender work extremely well for this recipe.

Note: You will end up with more fresh pineapple purée than you need for this recipe. It’s easiest to make more, and use the remaining purée for smoothies, or for more margaritas! I add my leftover purée to a small mason jar, refrigerate, and use within 2 days. Just remember to shake vigorously (or stir well) just before serving, as it will separate. 

Cocktail

STEP 1

Halve about 2 to 3 fresh limes. Use one of the lime halves to rub the rim of two 11 ounce rocks glasses. Then dip the wet rim of each glass into the margarita salt (or Tajín - see Note below), and tap the glass to remove any excess. Set aside.

Note: I like using this margarita salt that comes in its own container. For another spicy twist, use Tajín Clásico chile lime seasoning on the rim of the glass. Just rub the glass rims with lime, spread Tajín on a plate, and dip the wet rims into the Tajín. Although optional, I cut of few slices of lime for the garnish in these photos.

STEP 2

Using a juicer, squeeze 2 ounces fresh lime juice from the cut limes, and set aside. Using protective gloves, cut 3 slices fresh jalapeño (plus 4-6 more slices for optional garnish), remove seeds (optional), and set aside.

STEP 3

To a cocktail shaker, add lime juice, 3 jalapeño slices, and 1 ounce Pineapple Simple Syrup. Muddle gently to release the essence from the jalapeño. Add ice cubes, 1 ounce Grand Marnier liqueur, 4 ounces reposado Tequila, and 2 ounces fresh pineapple purée. Cover, and shake vigorously. 

STEP 4

Fill the prepared cocktail glass with fresh ice cubes, add 2 to 3 slices of fresh jalapeño (optional) to each of the prepared glasses. Strain the cocktail into prepared glasses.

SERVING SUGGESTIONS

Garnish with any or all of the optional garnishes (wedge of fresh pineapple, fresh pineapple leaf, and/or a fresh lime wheel). Serve immediately, and enjoy!

To make these delicious margaritas, you'll need a few simple ingredients: fresh pineapple, jalapeño slices, fresh lime juice, my Pineapple Simple Syrup, reposado tequila, Grand Marnier liqueur, and ice. The combination of sweet pineapple and spicy jalapeño creates a perfect balance of flavors that will leave you craving more. Whether you're hosting a summer party, celebrating Cinco de Mayo, Memorial Day, or Labor Day, or enjoying a relaxing evening at home, these Fresh Pineapple Jalapeño Margaritas are sure to impress your taste buds and wow your guests. 

How do you ensure the best results from this recipe?

My 6 tips to make Fresh Pineapple Jalapeño Margaritas:

  1. Use fresh organic ingredients, like fresh pineapple, fresh lime juice, and a fresh jalapeño. 

  2. The most important part of this cocktail is to use a fresh ripe pineapple. All you need is one cup for this recipe, but the flavor it imparts is well worth the 5 minute effort to cut up a fresh pineapple, and less than 1 minute to purée. You will be amazed at the flavor of this cocktail! Do not use frozen pineapple, or pineapple juice, as it will change the flavor balance of the entire cocktail. For any leftover pineapple, just use the rest to add to your yogurt, or freeze it to make smoothies, or make my Fresh Pineapple Sorbet

  3. After you cut the pineapple, save the core and make my Pineapple Simple Syrup recipe. Believe me, this adds another level of pineapple flavor to this cocktail, so don’t skip this step. You can cut the pineapple and make the syrup the day before, and just store it in the refrigerator until ready to use. 

  4. The reposado Tequila gives this recipe more flavor than a blanco Tequila. I like using Herradura reposado Tequila in this recipe.

  5. Do not skip the margarita salt rim (or Tajín). It provides a nice salty balance for this sweet and spicy cocktail.

  6. Garnish at will!  Try floating some jalapeño slices in the glass, and place a pineapple wedge on the rim, along with a pineapple leaf in the glass for a simple but fun presentation. You can also add a lime garnish for an extra touch of tropical flair!  

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it Even Spicier: I like the balance of using 3 deseeded jalapeño slices in this recipe. If you want it spicier, do not remove the seeds. If you dare, add a total of 4 jalapeño slices (with seeds) to the cocktail, then muddle. Then float 2 to 3 jalapeño slices in each glass when you pour the cocktail, and fasten your seat belt for a spicy ride!!

  • Make it Milder: Definitely remove all the jalapeño seeds, as they contain much of the spicy heat. Use only 1 jalapeño slice in the cocktail, then muddle. You can float 1 to 2 jalapeño slices in the glass when you pour the cocktail (or opt to omit them). 

  • Make it Sweeter: Add 1 ½ ounces of Pineapple Simple Syrup, instead of only 1 ounce. If you really don’t have time to make this simple syrup, you can always replace it with the same quantity of agave nectar. It won’t have the same punch of pineapple flavor, but it will still be tasty. 

  • Make it Quick & Easy: Although I don’t recommend using pineapple juice for this recipe, I suppose you could do so if you are in a pinch for time. Just use a high quality unsweetened pineapple juice. My disclaimer is that I haven’t tried it with juice or using the same quantities of the other ingredients, so I cannot be sure that it will be a close representation of my original cocktail. I really encourage you to try it with fresh pineapple purée first.
