GRILLED PEACHES with MASCARPONE

Grilled Peaches with Mascarpone are the perfect summer dessert! Grilling enhances their natural sweetness and gives them a smoky, juicy, and lusciously smooth texture. Delicious on their own, or with the creamy decadence of vanilla honey mascarpone, roasted hazelnuts, and a drizzle of honey. Can easily be made vegan!

Ingredients

VANILLA HONEY MASCARPONE:
GRILLED PEACHES:

Instructions

VANILLA HONEY MASCARPONE:
  1. In a small mixing bowl, add mascarpone cheese and honey (or agave). Using a silicone spatula, mix until softened & combined. Add vanilla bean paste, and mix to combine. Add half & half, and mix well to combine. Refrigerate until ready to serve.
GRILLED PEACHES:
  1. Roughly chop roasted hazelnuts, and set aside.
  2. Halve peaches (they should be ripe, but still somewhat firm), and remove and discard the pit. Place peaches on a plate, and brush cut side with avocado oil. Then brush with honey.
  3. Grill on medium-high heat, cut side down for 3-5 minutes (or until grill marks are visible). Remove from heat. For a vegan option, serve with a drizzle of agave nectar and chopped hazelnuts.
  4. Or serve by spooning honey mascarpone mixture over each peach, sprinkle with chopped hazelnuts, and drizzle with honey. For an herby finish, sprinkle thyme leaves (optional). Serve immediately, and enjoy!

Notes

  1. Vegan Option: Omit the honey vanilla mascarpone. Brush peaches using agave nectar (instead of honey). Serve grilled peaches with chopped hazelnuts and a drizzle of agave. If you don’t like agave, you can brush and drizzle them with pure maple syrup. 
  2. When grilling, check the peaches for grill marks after 3 minutes. If not done, grill another 1-2 minutes, or until grill marks appear. Time will vary depending on your grill.
  3. Makes 8 servings (1 peach halve per serving).

A healthier summer dessert!

Grilled Peaches with Mascarpone are a great choice as a summer dessert! They are a healthier option because this recipe uses no refined sugar. Grilling enhances their natural sweetness and gives them a smoky, juicy, and lusciously smooth texture. It’s definitely a healthy dessert when served with just chopped hazelnuts and a drizzle of honey. However, if you want the full richness of this dessert, then don’t skip the creamy decadence of vanilla honey mascarpone. 

The exact origin of grilled peaches is not exactly well-documented, but likely stems from the Mediterranean and Middle Eastern cuisines. Grilling fruits, including peaches, were commonly prepared in these areas, where open flames and grilling techniques have long been used in cooking.

Grilling fruit caramelizes the sugars in the fruit, and this process not only intensifies the flavor but also adds a smoky and charred dimension that pairs wonderfully with the sweetness of the peaches. Grilled peaches have become a popular dessert in many Western cuisines, especially during the summer months when fresh peaches are in season. 

Over time, this dessert has evolved to include various toppings and accompaniments, such as mascarpone cheese, ice cream, honey, and nuts. These additions add deliciously creamy and crunchy textures and flavors, which pair well with the natural sweetness of grilled fruit. 

How do you ensure the best results from this recipe?

My 5 tips to making the best Grilled Peaches with Mascarpone:

  1. Use organic ripe peaches that are somewhat firm. This recipe is best when peaches are in season.

  2. Use good quality honey. I used Trader Joe’s multi-flora & clover honey. Because you are brushing the peaches before grilling and finishing with a drizzle of honey, the type of honey you use will impart a specific flavor to this dessert. For more honey recommendations, see the Pimp My Recipe section below. 

  3. Check the peaches after 3 minutes on the grill to ensure they don’t burn. Use metal tongs (the silicone ones slip on the peaches) to peek under and check if there are grill marks. A few burnt edges add to the flavor, but you don’t want it completely charred.

  4. You can add the honey, vanilla bean paste, and half & half all at once into the mascarpone cheese, but I find the stirring each ingredient individually into the mascarpone helps to loosen it up. Please note that over mixing may make it grainy. If it becomes grainy, just add ½ tablespoon of half & half at a time until it recovers and becomes smooth again. 

  5. I prefer using Trader Joe’s roasted & unsalted hazelnuts for this recipe. For other nut variations, see the Pimp My Recipe section below.

Pimp My Recipe:

  • Make it Vegan: As noted in the recipe card, it’s easy to make this a vegan dessert. Simply omit the vanilla honey mascarpone topping. Then replace the honey with either agave nectar or pure maple syrup (I like the dark amber syrup). Brush and drizzle grilled peaches with either agave or syrup, and sprinkle with chopped hazelnuts, and enjoy! 

  • Make it Healthier: Omit the vanilla honey mascarpone topping, and grill the peaches as directed. Top with chopped hazelnuts and a drizzle of honey. 

  • Not sure what type of honey to use? The honey you use will add specific flavor notes to the peaches. I like Trader Joe’s multi-flora & clover honey, as it adds subtle floral notes. McCoy’s orange blossom honey would pair well with this recipe. To enhance the smoky flavor of the grilled peaches, you could also use Trader Joe’s mostly mesquite honey. As noted above, you can also use a hot honey, which is an easy way to make this a spicy dessert. 

  • Want to make it spicy? Trader Joe’s spicy honey sauce gives this dessert a lovely smoky and spicy flavor without overpowering heat. Two other delicious spicy honeys are Mike’s hot honey and Manuka Doctor hot honey.

  • Want it extra spicy? Try Mike’s extra hot honey combo (includes original hot honey and extra spicy). You can add even more heat and make it off the charts by sprinkling on a little ground cayenne pepper onto the peaches before they are grilled.

  • Don’t have an outdoor grill? Use a grill pan instead! Keep in mind that the time it takes to grill the peaches on a grill pan may vary, depending on your pan and stovetop.  

  • Don’t like hazelnuts? You can replace chopped hazelnuts with either pistachios, walnuts, or pecans. They all add an interesting flavor with the peaches.
