AIR FRYER DIJON POTATOES

A few simple ingredients turn ordinary potatoes into something really special. Using only 5 ingredients, these Air Fryer Dijon Potatoes are a quick addition to any weekday meal, and delicious enough for company. If you are looking for a nice change from your ordinary potatoes, then you must try this quick and easy recipe!

Instructions

  1. In a large mixing bowl, add olive oil, Country Dijon Mustard, Herbes de Provence, salt, and pepper. Whisk together until fully emulsified (mixture will be very thick), and set aside the marinade.
  2. Wash baby potatoes, pat dry, and halve with a sharp knife. Add the potatoes to the marinade in the large mixing bowl, and toss well to coat.
  3. Place basket inside NINJA Foodi Deluxe. Add coated potatoes to the NINJA basket (see Note #1, #2 & #3), and close the lid. Turn dial to “AIR CRISP.” Press “TEMP” and turn dial to “400F.” Then press “TIME” and turn dial to set for “20” minutes. Press “Start/Stop” dial to begin cooking.
  4. While the potatoes are roasting, chop parsley, and set aside. Toss potatoes after 10 minutes. When 20 minutes of cooking is complete, the pot will beep and automatically switch to “Keep Warm” mode. Test for doneness by inserting the tip of a knife into a couple of potatoes. They should be fork tender (see Note #4). Toss potatoes with chopped parsley right out of the oven, and serve immediately.

  1. Ninja Foodi Deluxe and Instant Pot Instructions provided are based on our machine models. We recommend using our instructions as a guideline, but following the specific Air Fryer instructions for your cooker. Every Instant Pot and Cooker will vary based on brand and model, so it’s important to follow the instructions and cooking time for your machine.
  2. The recipe instructions are for an 8-quart Ninja Foodi Deluxe Tendercrisp Pressure Cooker FD400 Series. You can also make this recipe in a 6-quart Instant Pot Duo Crisp 11-in-1, or use an Instant Pot Air Fryer Lid 6 in 1 in conjunction with your Instant Pot Duo. Instant Pot cooking instructions are provided in a “Note” within each step of our Step by Steps Instructions within our Recipe Blog page.
  3. If you don’t have an air fryer, preheat a conventional oven to 400°F (for extra crispy, preheat to 425°F). Line a baking pan with aluminum foil, and lightly spray with cooking spray. Dump prepared potatoes onto the baking sheet, and spread into a single layer. Bake for 20- to 30 minutes, tossing every 10-15 minutes, until potatoes are fork tender. 
  4. For Air Fryer: If potatoes are not done after 20 minutes, toss again, and set machine for 400F, and cook for another 5 minutes.
  5. Yields 6 servings (or 8 small servings).

Step by Step Instructions

 

PREPARATION

Organize all your tools and ingredients before you begin. Getting all your ingredients in one place at the beginning will shorten your prep time.

NINJA FOODI DELUXE vs. INSTANT POT

Notes:  The recipe instructions are for the air fryer function in an 8-quart Ninja Foodi Deluxe Tendercrisp Pressure Cooker FD400 Series. This recipe can also be made with a 6-quart Instant Pot Duo Crisp 11-in-1, or using an Instant Pot Air Fryer Lid 6 in 1 in conjunction with your Instant Pot Duo. 

  • 6-quart Instant Pot cooking instructions will be provided in a “Note” at the bottom of each step, if different than the Ninja Foodi Deluxe Cooker instructions.

  • If you don’t have an air fryer, these potatoes can be roasted in a conventional oven. See Note in Step 3 for details.

STEP 1

In a large mixing bowl, add 2 tablespoons extra virgin olive oil, 2 tablespoons Country Dijon Mustard (coarse ground mustard), ⅛ teaspoon Herbes de Provence, ½ teaspoon kosher salt, and ¼ teaspoon ground black pepper. Whisk together until fully emulsified (mixture will be very thick), and set aside the marinade.

STEP 2

Wash 2 pounds baby potatoes, pat dry, and halve with a sharp knife. Add the potatoes to the marinade in the large mixing bowl, and toss well to coat.

STEP 3

Place basket inside NINJA Foodi Deluxe. Add coated potatoes to the NINJA basket (see Notes Section for details on machine models), and close the lid. Turn dial to “AIR CRISP.” Press “TEMP” and turn dial to “400F.” Then press “TIME” and turn dial to set for “20” minutes. Press “Start/Stop” dial to begin cooking.

Instant Pot Cooking Instructions - For 6-quart Instant Pot Duo Crisp 11-in-1, set the trivet in the pot (for the Ninja pot, no trivet is needed). Place basket on top of the trivet, and add the potatoes to the basket.

Conventional Oven Cooking Instructions: If you don’t have an air fryer, preheat a conventional oven to 400°F (for extra crispy, preheat to 425°F). Line a baking pan with aluminum foil, and lightly spray with cooking spray. Dump prepared potatoes onto the baking sheet, and spread into a single layer. Bake for 20 to 30 minutes, tossing every 10-15 minutes, until potatoes are fork tender. 

STEP 4

While the potatoes are roasting, chop 2 tablespoons of fresh Italian parsley, and set aside. Toss potatoes after 10 minutes. When 20 minutes of cooking is complete, the pot will beep and automatically switch to “Keep Warm” mode. Test for doneness by inserting the tip of a knife into a couple of potatoes. They should be fork tender (see Note below). 

Note: If potatoes are not done after 20 minutes, toss again, and set machine for 400F, and cook for another 5 minutes. 

Instant Pot Cooking Instructions - Place (Air Fryer) lid on Instant Pot and select settings according to Air Fryer instructions for your Instant Pot/Cooker model for air frying baby or small potatoes. Press “Air Fry” then set “Temp” to “400F” and “Time” for 20 minutes (or the time according to your cooker model instructions). Then press “Start.”

SERVE

Toss potatoes with chopped parsley right out of the oven, and serve immediately.

Flavorful Potatoes Made Easy in an Instant Pot!


These Air Fryer Dijon Potatoes are crispy on the outside and tender inside. Flavorful but not overpowering, these potatoes make the perfect side dish to accompany any main course. 

It’s difficult to find easy side dish recipes that don’t require a lot of effort. When I entertain, it’s essential to find at least one or two recipes that are quick and easy to make, and don’t require too much of my attention during the last 15 minutes before a meal is served. For me, it’s a balancing act to pick the right recipes that are special enough for company, but simple enough that it doesn’t stress me out when I’m trying to put together a meal for guests. 

This air fryer recipe really couldn’t be easier. It saves space in your oven for other parts of your meal, and just requires a few seconds of tossing, while your Ninja Foodi Deluxe, Instant Pot, or Air Fryer does all the work. What could be easier? The best part is these five ingredients add a lovely flavor to your baby potatoes. 

If you don’t own an air fryer, no need to look elsewhere. We provide a quick fix, and instructions for roasting these delicious baby potatoes in a conventional oven.

Our 4 tips to making delicious Air Fryer Dijon Potatoes:

  1. Use organic baby potatoes and Italian parsley to bring out the best in this recipe.

  2. Use a good quality Dijon mustard. For this recipe, we prefer using coarse ground mustard. We recommend Country Dijon Mustard, which is widely available in stores nationwide. If you cannot find coarse ground, then you can certainly substitute with regular (smooth) Dijon mustard.

  3. Don’t skip the tossing! Toss the potatoes thoroughly after 10 minutes of roasting in the air fryer. This will rotate the potatoes and provide more even cooking.

  4. Toss cooked potatoes with chopped fresh parsley right out of the oven, and serve immediately to retain the fresh flavor of the herb.
