BLUEBERRY SIMPLE SYRUP (AND TOPPING)

This Blueberry Simple Syrup is bursting with the sweetness of fresh, plump blueberries. This quick and easy 2 ingredient simple syrup is a 2-in-1 recipe! Both the blueberry syrup and topping can be used on pancakes, waffles, pastries, and dessert items. And, the blueberry simple syrup is absolutely amazing in cocktails and drinks!

Instructions

  1. To a heavy 3 quart saucepan, add water, sugar, and blueberries. Stir to combine, and place on medium heat. Stirring frequently, bring to a boil (about 7-10 minutes), and boil for 1 minute.
  2. Reduce heat to medium-low, and simmer for 5 minutes stirring frequently. Remove from heat, and allow to cool for 45 minutes.
  3. Place a fine mesh strainer over a large measuring cup (4 cup), and strain syrup and blueberries. With a small spoon, gently lift blueberries from side to side to help drain the liquid (do not push them down). Set aside blueberry topping. Use a funnel to pour blueberry syrup into an airtight bottle or bottle with dispenser.

Notes

  1. Store refrigerated in airtight containers. Blueberry simple syrup can be stored for up to 1 month. Blueberry topping should be enjoyed within 5 days. 
  2. Recipe can be made ahead of time. 
  3. Makes about 1 ½ cups of blueberry simple syrup (24 servings - 1 tablespoon per serving), and about 1 cup of blueberry topping (8 servings - 2 tablespoons per serving).

The blueberry simple syrup is amazing in drinks and cocktails, like my Sparkling Blueberry Lemonade (recipe coming soon), and my Fizzy Blueberry Gin Cocktail (recipe coming soon). This recipe doesn't require hours in the kitchen. With only two ingredients (plus a little water), a bit of stirring, and a quick straining, you'll be drizzling this irresistible sweetness over your food and drink creations in no time!

Trust me when I say that this is a wonderful blueberry simple syrup recipe where both the syrup and topping can be used on so many foods and drinks! I’m so glad my former blog partner, Leigh, shared this recipe with me as it has inspired me to make so many recipes using both the blueberry syrup and the topping!

How do you ensure the best results from this recipe?

My 5 tips to making a delicious Blueberry Simple Syrup and Topping:

  1. Use fresh organic blueberries. I don’t like using frozen in this recipe, as it changes the intensity of the blueberry flavor and adds too much water. 

  2. Use filtered water for the best flavor. 

  3. Make sure you stir the syrup frequently. Otherwise the sugars will stick to the pan, and might burn. This would create a bitter taste to your syrup. 

  4. When straining, do not push down on the blueberries. Just gently lift them from side to side in the strainer to help the liquid drain a little more.

  5. The syrup will thicken as it cools. Store the simple syrup in the refrigerator in an airtight container (airtight bottle or bottle with dispenser) for up to 1 month. The topping should also be refrigerated in an airtight container and should be enjoyed within 5 days. 

It’s time to customize and Pimp My Recipe. 

Pimp My Recipe:

  • Make it Spiced: If you are not going to use the syrup in drinks or cocktails, then spice it up with a bit of cinnamon! Just add one whole cinnamon stick to the mixture in Step 1. For a more subtle cinnamon flavor, discard the stick once you remove the pan from the heat. For a stronger cinnamon flavor, leave the cinnamon stick in the pan while it’s cooling. Then strain and discard the cinnamon. The spiced syrup is delicious on French toast, waffles, pancakes, ice cream, and more! The topping is equally as delicious on these items. 

  • Make it Thicker: If you want it thicker to use this as blueberry syrup (and not as a simple syrup, which is thinner), then just boil it a little longer. Instead of boiling it for 1 minute, boil for 3 minutes. Then reduce heat and simmer for 8-10 minutes for a thicker syrup. It will thicken as it cools.
